Where our flavours come from

Great taste begins with knowing where our ingredients come from. That’s why we pay close attention to provenance and give preference to products from our region, from Austria and from neighbouring Bavaria whenever it makes sense and the season allows.

Much of what we serve comes from close by: meat and sausages from our own butcher’s shop, Tauern area game, Burgstaller organic beef and pork from the Flachgau region. Our bread comes from Rösslhuber bakery just across the road, while milk and cheese are sourced, among others, from Salzburg Milch, Höflmaier and Eisl. Together with our partner, the Schwaighofer family from Wals, we also focus on short transport routes for fruit, vegetables and herbs.

Our whole eggs come from Salzburg Land-Ei, while regional fish comes from Lake Mattsee and Lake Obertrum.

For everything that cannot be sourced close to home, we choose just as carefully. Organic and Fairtrade products complement our selection wherever regional sourcing is not possible.

As nature and harvests do not follow a fixed menu plan, the origin of individual products may vary depending on season and availability. What remains the same is our commitment to transparent sourcing, high quality and keeping distances as short as possible.
